Velvet Undertow [Cocktail Recipe]

“This drink centers on the complementary flavors from the falernum’s gentle sweetness and spice, highlighted nicely by the botanicals of the vermouth,” says Tom Lindstedt, bartender at La Moule in Portland, Oregon. “Could you use a bolder, house-made falernum and more bombastic scotch? Sure, why not? But sometimes subtlety pulls you under the surf more effectively.”

INGREDIENTS

  • 1½ oz. blended scotch, such as White Horse or Black Bottle
  • ¾ oz. Dolin Dry or other dry vermouth
  • ½ oz. J.D. Velvet falernum or other falernum
  • Garnish: squeezed lime disc

DIRECTIONS

Combine all ingredients in a mixing glass. Add ice and stir to dilute properly. Strain over new ice in a rocks glass. Cut a large coin-shaped disc from a fresh lime and squeeze a small amount of juice into the drink before dropping it in as a garnish.
