The 11th Commandment [Cocktail Recipe]

Rafael Del Busto, head bartender at Atrium DUMBO in Brooklyn, created this drink, saying, “This complex, extremely well-balanced cocktail has layers of citrus and herbal notes followed by floral and spiced notes from the chamomile cordial, finishing sweet and nutty yet dry from the mixture of sweet vermouth and Madeira.”

INGREDIENTS

  • ¼ oz. Green Chartreuse
  • ½ oz. chamomile cordial (recipe below)
  • ¾ oz. Madeira
  • ¾ oz. Old Overholt Rye or other rye whiskey
  • 1 ½ oz. Carpano Antica sweet vermouth
  • Garnish: lemon twist

DIRECTIONS

Stir all ingredients together in a mixing glass. Strain into a coupe glass and garnish with lemon twist.

How to make Chamomile Cordial

  • 1 cup dried chamomile flowers
  • 1 pound superfine sugar
  • 2 cups water
  • 50 pink peppercorns
  • 1 cinnamon stick
  • 1 lemon peel
  • 1 orange peel
  • 3 oz. apple brandy

Combine chamomile, water, sugar, peppercorns, cinnamon, and lemon and orange peels in a medium sauce pan. Bring to a boil about 10 minutes, being sure to dissolve all sugar. Cover and let cool to room temperature. Strain through cheesecloth to remove all solids. Add apple brandy. Keep refrigerated for up to 1 month.
