The Paper Plane was invented by mixologist Sam Ross in the early 2000s, Allen Lancaster, master cocktail craftsman at The Bar at The Spectator Hotel in Charleston, South Carolina explains. His In Plane Sight swaps aged rum for bourbon, Braulio Amaro for Amaro Nonino, and lime juice for lemon. He also adds fresh rosemary, which pairs up with the natural herbal profile of the Braulio. “This produces a darker, deeper, richer version of the original,” Lancaster says. “Balanced sweetness from the rum; bitterness and herbal notes from the Aperol, Amaro and rosemary; and acidity from the lime truly form a well-balanced libation with wonderful depth of flavor.”
- 3 sprigs of rosemary
- ¾ oz. Ron Zacapa 23 (or comparable aged rum)
- ¾ oz. Braulio Amaro
- ¾ oz. Aperol
- ¾ oz. fresh lime juice
Break two of the rosemary sprigs into a shaker tin and muddle. Set aside third sprig for garnish. Fill a rocks glass with ice and set aside. Combine all remaining ingredients in the shaker, add ice, and shake vigorously. Pour through a fine-mesh strainer into the reserved rocks glass. Add the rosemary garnish and torch until smoldering.
