From LOCL at the Nylo Hotel, an Irish whiskey cocktail with some extra sparkle for the holiday season
1 ½ oz. Knappogue Castle 12 year old Irish whiskey
3 oz. apple cider
½ oz. Earl Grey tea syrup (see note)
2 oz. sparkling wine
Shake all ingredients with a few ice cubes and pour into a mug. Top with sparkling wine and garnish with a lemon twist. To make a hot version, stir all the ingredients together in a mug and top with hot water.
Note: To make Earl Grey tea syrup, heat 4 cups water with 4 cups sugar until sugar is dissolved and allow to cool. Steep 1 cup Earl Grey tea leaves for 24 hours; then strain and refrigerate for up to 7 days.
