This is like taking a trip to New England—there’s an earthy must that’s complemented beautifully by woodpile, pine trees, apple orchard, and clean air. Given the nose, the palate is somewhat surprising (but no less lovely); that earthiness lingers on, but it’s joined by lemon-poppyseed muffin and white peppercorn. A lovely round finish coaxes out some chocolate, marking a great end to a delicious ride.

Garrison Brothers Balmorhea, 57.5%

Coffee grounds, red wine, red berries, and light char on the nose. Water brings out floral notes. Overall the flavors come on strong—there is nothing subtle about this one. The palate offers lots of chocolate and cinnamon stick, accented by maraschino cherry. The finish is long and spicy, with Big Red gum and oak. A powerfully forward whiskey in true Texas style, with plenty to offer.

Westland Colere 2nd Edition, 50%

The nose is fruity with notes of candied pears, clementine, and watermelon, then nutty with aromas of marzipan, nougat, and pistachio. Water brings out Cocoa Krispies and fruit cocktail. A lush palate delivers more sweet and syrupy fruit accentuated by white pepper and peanut butter crackers. That sweetness continues through to the finish which evokes black and white cookies. Hardin’s Creek Jacob’s Well, 54%

A blend of 15 and 16 year old bourbons. There is a lovely berry note on the nose, alongside milk chocolate, orange peel, leather, lilacs, spicy oak, and lemon icing. A lively palate brings cinnamon stick, buttered popcorn, snickerdoodle cookie, and peppery spice. The finish is long but thin, with lots of salinity. There’s nice composition here and a balanced sweetness throughout, with spiced and earthy undertones.

Cascade Moon Mellow As Moonlight 15 year old, 39.9%

At less than 40% ABV, this one is technically not a whiskey, but it succeeds admirably. Caramel, maple syrup, and canned sweet corn on the nose, plus dried herbs and mature oak. Water brings out confectionery notes of coconut candy and candied orange peel. Rich chocolate and caramel on the palate, with more sweet coconut. Great depth and maturity. A lengthy finish completes the journey. A surprising gem.

The Cardrona Growing Wings, 64.9%

Evident power, so dilution is a must for this whisky aged for 5 years. Dark fruits, toffee, pumpkin spices, dried cranberry, mixed peel, pecan pie, red apple, and plum on the nose. Neat, there’s red berries, strawberry, and pepper, but water enables a great appreciation of the oloroso sherry influence with flavors of pears, citrus, gingersnaps, red apple, cherry, and a spicy finish. The Cardrona Just Hatched, 64.4%

This 3 year old expression has an attractive nose. It’s like eating fruit salad in a flower shop: lavender, melon rind, vanilla, beeswax polish, green banana, and cardamom, though the alcohol is noticeably high. It has a weighty mouthfeel with sweet honey, nuts, and a fruity, tangy intensity as the alcohol peaks, winding down with vanilla fudge, candied orange, cantaloupe, and ginger. Given its age, there’s plenty of potential here. (792 bottles)

Maison Benjamin Kuentz Spicy Nouba, 45%

Intriguing use of cognac, Italian vermouth, and ginger brandy casks; the nose has lemon meringue pie, delicate florals, white grape, candied orange, green banana, herbs, ground pepper, mild paprika, tobacco, and new pencils. The palate shows sweet dried fruits, malt, light vanilla, caramels, ginger loaf, peppery spice, and a dry finish of bitter peels, turmeric, and pepper.

291 M Wood Staves and Maple Syrup Barrel Finished, 63. 5%

A dark brown whiskey with orange peel, black tea, new leather, and green apple candy on the nose. It is sweet and pungent, with tropical fruit emerging with water. A syrupy palate brings apple tart, vanilla pound cake, and honey and granola, with water unlocking notes of chile-dusted mango and toasted marshmallow. The finish is long, with sweetened coffee and chocolate syrup. There is a lot to unpack here, but water helps.

A bouquet in the glass, abundant with freshly cut grass, jasmine, and orange blossom. That changes dramatically upon first sip, where there’s a mouthwatering heat to the palate—water tames this beast, luring out chocolate-covered cherries, dark-roast coffee, hot fudge, and fresh coconut water. Talnua Olde Saint’s Keep (2022 Release), 50%

This was aged in bourbon and port casks, blended, and finished for 10 months in Pineau des Charentes casks. Mixed red berries, damson jam, clove, peppercorn, ginger root, baked orange, blueberry granola bar, new leather, and tobacco leaf. Mouth-drawing, with strawberry, intense pepper and clove spices, and underlying maltiness. The texture thickens with more concentrated blue fruit, before a final phase of menthol, mint, tobacco, and apple. (Colorado only)

Stellum Fibonacci Blend No. 1, 57.56%

Plenty of cinnamon spice on the nose, sweetly balanced by vanilla bean, some fresh, green notes, and root beer float. While the palate starts off quite hot, once the Red Hots surge passes a lovely dollop of honey emerges, followed soon after by creme brûlée. Raspberry syrup adds a nice, if subdued, fruity zing. Honeyed oats, mango candies, and pomegranate open this plush whisky. The sweet fruit notes are matched by floral potpourri and soft oak, making for a breezy yet layered single malt. The palate is faintly smoky and citrus-forward with flamed orange peel, clementine, and candied lime drifting through honey, jammy berries, and maraschino cherries. After a sweet sip, the finish on this dries out, with additional smoke, wood spice, and barrel charr.

Laws Whiskey House 8 year old Bottled in Bond Four Grain, 50%

Overall, this is a classic yet rustic bourbon. The nose is chocolaty, nutty, and sweet like a Reese’s Cup. Backing up the peanut flavors are sweet and tart cherries, grape jelly, and Red Hots candies. The palate is spicier, offering black pepper, dried herbs, and barrel char alongside more sweet jammy fruit. Flavor-wise, the finish is in line with the nose and palate, and has good length.
