Owner Jamie Boudreau has amassed quite a canon of spirits—3,500 labels, which he claims is the largest collection in the Western Hemisphere. Canon specializes in whisky, but its captain’s list also features an extensive number of other spirits, including quite a number of rare bottles. Or turn straight to the “hardcore porn” section for fifteen pages of vintage spirits, such as Boardman’s Deluxe Straight Whiskey 1912 and Rare Super Old Nikka circa 1970. Cocktails are served in everything from a light bulb to a giant blood bag.

Part dive bar, part restaurant, the Whisky Bar has an extensive drinks menu, including a number of Indian and Japanese whiskies, and its beer list is just as impressive, with the 24 on-tap offerings favoring local and craft breweries. The bar is also known for its craft cocktails, but the atmosphere is no-frills, with booths and tables in addition to bar seating. Food is a flurry of gastropub favorites—scotch eggs, sliders, and fish and chips.
